But "taco catering" covers a wide range of experiences, and not every caterer offers the same thing. Before you book, here are five questions worth asking.

1. Is this Drop-Off, Staffed, or full on-site cooking?

This is the single biggest factor in both price and experience. Drop-Off means a buffet is set up and left for your guests to serve themselves — budget-friendly, but no staff presence. Staffed service means a crew runs the buffet line and handles cleanup so nothing falls on you or your wedding party. On-site grill service means live mesquite-fire cooking happening in front of your guests during the reception — a built-in visual centerpiece, not just a meal. Know which one you're actually booking, since the price difference reflects real differences in labor and logistics, not just marketing language.

2. What's included in the per-person price, and what costs extra?

Ask specifically what's covered: proteins, tortillas, salsas, toppings, setup, and staff time are usually standard, but drinks, dessert, extra proteins, and rental equipment often aren't. For on-site grill service in particular, ask whether the staffing and equipment fee is a flat rate or scales with your guest count — a flat fee (like our $300 On-Site Grill fee) is more predictable for budgeting than a per-guest add-on.

3. Can the menu accommodate dietary restrictions?

Weddings almost always have at least a few guests with dietary needs — vegetarian, gluten-sensitive, or otherwise. Ask early whether the caterer can build accommodations into the existing menu (a vegetarian protein option, for example) rather than requiring a separate, more expensive add-on menu.

4. How far in advance do you need to book?

Good caterers with a hands-on, small-team model — ours included — take on a limited number of events per season to keep quality consistent. That means popular wedding dates, especially weekends in cooler months, can book up months in advance. If you have a date in mind, it's worth reaching out early rather than assuming you can lock in catering a few weeks out.

5. What does the deposit and booking process actually look like?

Ask exactly what secures your date — a signed contract alone usually isn't enough; most caterers, including us, require a deposit before a date is actually held. Get clarity on the deposit amount, when the balance is due, and the cancellation or rescheduling policy before you commit, so there are no surprises as your wedding date approaches.
